My go-to Diwali mithai every single year! This coconut barfi is so easy to make and loved by everyone. Sharing the full recipe below—hope you love it as much as we do! 🪔 Recipe: 300g freshly grated coconut (or frozen, thawed grated coconut; desiccated coconut can also be used) 400ml condensed milk 1 tsp cardamom powder 3 tbsp softened butter (or ghee) Chopped pistachios, for garnish Line a small baking dish (around 8x8 inches or similar size) with parchment paper, leaving some overhang for easy removal. In a heavy-bottomed, non-stick pan, add the grated coconut along with the condensed milk. Mix well to combine. Place the pan over a low flame. Stir the mixture continuously for 15-20 minutes. The mixture will gradually start to thicken and pull away from the sides of the pan, forming a single, fudgy mass. It is crucial to keep stirring throughout this process to prevent the mixture from sticking and burning on the bottom. Once the mixture has reached a fudgy consistency, remove the pan from the heat. Stir in the cardamom powder and the softened butter. Mix well until the butter is fully incorporated. Quickly transfer the mixture into the prepared baking dish. Use the back of a spoon or a spatula to press down lightly and evenly flatten the barfi mix. Top the barfi immediately with chopped pistachios, gently pressing them into the mixture. Let the barfi cool to room temperature, then transfer the dish to the refrigerator. Allow it to set completely for at least 3-4 hours, or until firm. Once fully set, use the parchment paper overhang to lift the barfi out of the dish. Slice the barfi into bite-sized squares or diamond shapes and serve Made this?
